Our Story

Opened in 2024, La Zozzona marks Chef Richard Blais’ first restaurant in Arizona—a vibrant celebration of his travels through Italy’s cities, coastlines, and countryside. Named for the Italian phrase meaning “messy delicious,” La Zozzona embraces the joyful, unpretentious spirit of Italian dining with housemade pastas inspired by Rome, wood‑fired steaks honoring Florence and Tuscany, and shareable cicchetti meant to bring people together.

Our cocktail program highlights iconic Italian flavors, while the wine list showcases celebrated regions from across the country. Every detail reflects Chef Blais’ playful, innovative approach to cuisine, creating a dining experience that feels both timeless and entirely new.

Sustainability

At La Zozzona, authentic Italian cuisine is complemented by a thoughtful commitment to sustainability. We source seasonal and locally grown ingredients whenever possible, allowing our culinary team to craft fresh, flavorful dishes while supporting local producers and reducing our environmental impact.

Our chefs embrace mindful cooking practices by utilizing ingredients from root to stem, repurposing vegetable trims, citrus peels, and other kitchen byproducts to reduce food waste and create house-made stocks, sauces, and garnishes. We also incorporate ingredients grown right here at Grand Hyatt Scottsdale Resort, including pomelos from our on-property trees, into select dishes and cocktails.

Beyond the kitchen, La Zozzona supports the resort's broader sustainability efforts through compostable to-go packaging, comprehensive recycling and waste diversion programs, refillable water stations, and eco-conscious operational practices. As part of Grand Hyatt Scottsdale Resort, we're proud to contribute to a dining experience that's as mindful as it is memorable.
